Soil & Grapes
Our organic farm stands on a land mainly composed of clay, organic matter and an important presence of stones. At the beginning, the area was very rocky and clay and had considerable difficulty drainage, but with a great and painstaking job of cleaning up we’ve made permeable allowing it to retain water in the right quantity. Before cultivating the vineyard we analyzed the land and chose together enologist 11 hectares that would guarantee the production of red and white grapes of great quality. The selected area is called “Sassi Neri” and his name comes the name of our red wine DOC Sassi Bruni, who refer to its land of origin and chemical and physical composition of the soil.

For our production we decided to choose indigenous varieties historically present in the area of Maremma Toscana and among them stands out above all the Sangiovese. The choice has fallen on the Sangiovese di Toscana, a grape of great satisfaction, with a beautiful and very sweet berry, on scions of Brunello or Morellino di Scansano (DOCG in the province of Grosseto). Just to get a result which rewards the high quality of the product we decided to split into two parts the plot of Sangiovese. For our organic red wines, Rosso di Capalbio Riserva “I Caprai”, the Sassi Bruni DOC and IGT Filari di Luna, has great importance a long exposure of the grapes on the side that goes from south to southwest.
The other variety is represented by Ansonica Costa d’Argento, which is also native, typical of the Argentario, difficult to work and to care for, with a grape that is necessarily softened.
It is exposed to the North-West and the North-East as too long exposure to the sun creates problems in terms of perfumes and the overall resilience of the grape. We therefore have a purity of Ansonica, but we put just 80% in Chiari DOC Sassi, making it more “friendly” with other varieties, going to ease the great body of this white very interesting. The DOC Ansonica consists of Argentario, Giglio, Capalbio and Orbetello.
But not only Sangiovese and Ansonica, on our farm we also international varieties such as Cabernet Franc, Cabernet Sauvignon, Merlot, Alicante and Petit Verdot. As for the whites we Sauvignon, Viognier and the Greco di Tufo which helps to give a higher acidity to Ansonica, making it gentler, cooler and perfect for a lighter diet.
CapalBIOfattoria chose from the start to produce only organic wines with sulfites thresholds significantly lower than conventional wines, using only environmental friendly methods. The European organic label is controlled upstream, and goes from the vineyard to the wine, which is fundamental to create a high quality product.
